1-Green Kebabs

If you want to offer your kid something scrumptious yet healthy, these Green Kebabs would definitely do it. Made with green vegetables like pea, mint and spinach, this dish is a perfect school snack for kids. 

Let’s get started:

Ingredients (for 6 Green Kebabs) 

  • Cooked Frozen Peas   - 3 Tbsp 
  • Cooked Spinach – 3 Cubes 
  •  Boiled Potatoes – 200 gm 
  • Chopped Ginger – ½ inch 
  •  Coriander – ½ handful 
  • Mint leaves – ½ handful 
  • Cornstarch – 1 Tbsp 
  • Salt – ½  Tsp 
  • Oil – 1 Tbsp     

Method

  • Separate half the total quantity of spinach. Mix the remaining half along with peas and ginger. Put all the ingredients in a blender or a food processer to get a smooth mixture. 
  • Take the mixture out in a bowl and add boiled potatoes to it along with spinach kept separated, corn-starch, salt, chopped coriander and mint. Using your hands, mix it properly. 
  • Keep the mixture in the refrigerator for around 20 minutes.           
  • Preheat the grill up to 200° C. Use a foil to line the grill pan and spread the oil evenly. 
  • Take a small amount of mixture in your hand and convert it into a flattened disc structure. Use the entire mixture.     
  • Grill them for at least 10 minutes. Flip them over and again grill them for 10 minutes. 
  • Serve them with tomato ketchup or homemade tomato chutney.    

2- Baby Spinach Omelette

Kids love eating omelette; that’s no news. Whether it’s the soft, fluffy texture of the omelettes or their unbeatable taste, omelettes are considered as the perfect food for your little sunshine. Now, the question arises – how to make omelettes for your kids even healthier? Well, leverage greens in your kitchen smartly and you are good to go.                   

Ingredients 

Eggs – 2Baby Spinach Leaves – 1 Cup Grated Parmesan Cheese – 1-1 ½ Tbsp Onion Powder – ¼ Tsp Nutmeg Powder – 1/8 Tsp   Salt and Pepper – as per taste Oil    

Method

  • Take a bowl and put the beaten eggs in it along with baby spinach leaves, parmesan cheese, onion powder, nutmeg powder, salt and pepper. 
  • Heat the fry pan or skillet. Add a small quantity of oil to it and put the egg mixture. Cook it for 3-5 minutes.    
  • Reduce the heat and continue cooking it for 2 more minutes. 

Tasty and fluffy spinach omelette for your kid is ready.
